Our Scottish salmon arrives fresh twice weekly. This fillet undergoes a gentle smoking process before being marinated in a flavorful tomato herb paste for over 6 hours. 

LeFumoir, founded by Joe Bassili, a master of salmon smoking who apprenticed under the esteemed Masters of the Trade in Scotland, boasts over two decades of experience. With a deep understanding of traditional techniques, Bassili exclusively uses salmon sourced from pristine waters.
